Today, I want us to prepare a super simple rice with carrots, which has very few ingredients but is simply delicious and will surprise you. It's a rice that you can eat alone, or use it as a side with grilled meats or fish, it's great.

Lately, I've been leaning more towards writing simple and straightforward recipes, either for those people who are just experiencing the world of cooking, those who are starting out or who simply don't like to spend a lot of time in the kitchen and want to prepare something delicious that doesn't require much effort.

To cook and eat deliciously, you don't necessarily have to spend a fortune, often we can prepare delicious things with ingredients we have at home, in this case, a rice with carrots, one of those dishes that although simple, end up with a delicious flavor and will surely encourage you to continue in the kitchen.

Personally, I love rice, I'm one of those people who never get tired of eating it, for this reason, I love plain white rice, those that come with different colors and textures, or those that we cook with different ingredients than the usual and achieve completely delicious flavors. For this reason, I try to play a lot with rice and try to find different recipes to change the weekly menu a bit.

I love this rice with carrots, and so does my family. Also, think about all the properties and benefits that carrots can provide, and this recipe is a very useful way to incorporate this ingredient into our diet. Tips and Common Mistakes

1- Make sure to fry the onion and garlic until they are golden before adding the rice. This step adds flavor to the dish and creates a tasty base for the rice.

2- When pearling the rice, it is important to stir occasionally to prevent it from burning.

3- Don't worry if the bottom of the rice browns a little. This crispy layer, known as "pegao" in some countries, is delicious and highly prized.

Ingredients

  • 2 cups of white rice.
  • 4 cups of vegetable broth chicken or water.
  • 1 cup of diced or grated carrot.
  • Oil.
  • 1 onion.
  • 1 garlic clove.
  • Salt and pepper to taste.

Instructions

  • In a pot, fry the finely chopped garlic and onion with a little oil, and then add the diced or grated carrot.
  • Fry a little and add the cups of rice. What we will do is pearl it before cooking it.
  • Continue frying all the ingredients for about 3 to 4 minutes, stirring occasionally so they do not burn.
  • After this time, add the broth, salt, pepper, and more oil if necessary or to your liking and stir.
  • Bring to a boil over high heat, and when the water has dried up, cover the pot, lower the heat and let it cook for another 15 minutes more.
  • And that's it, once it's ready, let it rest a little, fluff the rice with a fork and serve immediately.
