Colombian Almojábanas

Colombian almojábanas are that delicious snack you can enjoy at any time. Even on their own, they taste wonderful, but to fully savor them, pair them with a cup of hot chocolate or coffee. Feel free to indulge in as many as you want by preparing them at home.

Ingredients

  • 1 cup precooked white cornmeal or Masarepa
  • 1 pound of cottage cheese or curd
  • ½ cup of milk
  • 1 tablespoon of melted butter
  • ½ tablespoon of baking powder
  • ¼ tablespoon of salt
  • 2 eggs

Instructions

  • Preheat the oven to 205°C (400°F)
  • In a bowl add all the ingredients and mix them very well until you have a homogeneous dough.
  • Divide the dough into 10 balls and place them on a baking tray with parchment paper or greasing the tray with butter.
  • Leave them baking for about half an hour or until they are golden brown.
  • Serve and enjoy with a delicious cup of coffee or cup of chocolate.
