Ripe Banana Aborrajados

This recipe for Colombian aborrajados is very easy to prepare and is very delicious. You can accompany them with a cup of coffee or chocolate or even with delicious homemade oatmeal. You will only need two ingredients, ripe bananas and cheese. Enjoy preparing them.

Ingredients

  • 2 very ripe large bananas
  • Oil for frying
  • 4 slices of mozzarella cheese or your choice
  • 4 tablespoons of all-purpose flour
  • 2 eggs
  • 2 tablespoons of sugar
  • 3 tablespoons of milk
  • A pinch of salt

Instructions

  • In a large skillet or pot, place the oil to heat over medium heat.
  • Peel the bananas and cut them in half, add them to the skillet or pot and lower the heat to medium-low.
  • Fry the bananas for about 3 minutes or until they are golden on all sides, remember to turn them.
  • Place the bananas on paper towels to drain excess oil. Then with the help of two plastics, put each banana in between and crush them with your hand or a flat plate.
  • Now place a slice of mozzarella cheese on each mashed banana and wrap the banana forming a tortica, press the edges to seal well.
  • In a bowl mix the flour, sugar, and salt, add the eggs little by little, incorporate the milk to form a soft dough. Set aside.
  • Dip each banana tortica in the dough mixture and fry in the pan over medium heat for two minutes or until they are golden, remember to flip them for even cooking.
  • Drain on paper towels, serve and enjoy your aborrajados with a good cup of chocolate.
