Meatball soup is a light dish that's easy to make. If you're unsure of how to prepare it, here's everything you'll need to get started.

Ingredients

  • 1 lb ground meat beef, pork, or a mix
  • 6 cups beef broth or water
  • 2 whisked eggs
  • ½ cup breadcrumbs
  • Finely chopped green onions
  • 2 garlic cloves
  • 8.8 oz. pasta of your choice
  • 6 potatoes diced
  • Chopped cilantro to taste
  • Salt and pepper to taste

Instructions

  • Crush the garlic cloves well with a pinch of salt or finely chop them.
  • In a bowl, mix the ground meat with the breadcrumbs (if you don't have breadcrumbs, you can add a bit of wheat flour).
  • Add the whisked eggs, garlic, salt, and pepper to taste and mix well.
  • Form small-sized meatballs.
  • In a pot, place the beef broth or water over medium-high heat.
  • After 5 minutes, add the potatoes and pasta.
  • After 15 minutes, add the finely chopped onion and cilantro. Let it cook for 1 or 2 more minutes, and then it's ready. Serve hot.
