Ingredients

  • 125 g of butter
  • 75 g of sugar
  • 2 egg yolks
  • 100 g wheat flour
  • 150 g cornstarch
  • 1 teaspoon of baking powder.
  • 1 lemon
  • White or black chocolate
  • Arequipe to taste.

Instructions

  • In a bowl, mix the butter with the sugar until you get a soft cream (the butter should be at room temperature).
  • When you have obtained the sweet cream, add the egg yolks one by one and integrate them into the dough.
  • Then, grate the lemon and add the zest while continuing to beat. When you reach this point, heat the oven to 180 ° C.
  • Now add the previously sifted flour and cornstarch and baking powder. (You can sift everything together, but don’t skip this step, it’s essential).
  • After integrating the above, start kneading with your hands, you should do it until you get a consistent, thick, and lump-free dough.
  • Then, spread the dough with the help of a roller, leaving it with a thickness of 0.5 cm. Once well extended, cut medium or small circles of the desired size, and place them on a previously floured baking sheet.
  • Bake the alfajores for about 5 to 7 minutes until the rings lightly browned. It would be best if you did not let them brown a lot.
  • Remove from the oven and let them cool. Then, please take one of the circles, try it on the arequipe and place another ring on top.
  • In a bowl, add the chocolate and place it to melt in the water bath or the microwave for one-two minutes.
  • Place each alfajor in the melted chocolate to get the chocolate layer.
  • Let the chocolate harden so you can enjoy them.
