Ingredients

  • ½ pound of beans
  • 2 medium green bananas chopped into small pieces
  • 2 medium potatoes chopped into small pieces (Optional)
  • 2 sprigs of long onion or ½ medium egg onion finely chopped
  • 1 medium tomato finely chopped
  • ½ grated carrot
  • 1 sprig of chopped cilantro
  • ½ cube of ricostilla or maggie
  • Salt to taste

Instructions

  • Soak the beans the night before in room-temperature water, so they can absorb water and their cooking becomes easier.
  • Add the beans to a pressure cooker with enough water, cook over medium-high heat for 30 minutes.
  • Add the plantains, potato (if you're using it), onion, tomato, carrot, cilantro, bouillon cube or Maggie, and salt to taste, to the pressure cooker.
  • Check that you have enough water in the pot, it's possible that during the cooking process the water has reduced, if that's the case, add as much as necessary and cook over medium heat for half an hour.
  • Let the pot rest before uncovering it.
  • Serve accompanied by rice, fried meat, and slices of ripe plantain.

    Notes

    • You can add tomato sauce if you wish, do it before serving the dishes.
    • If you are going to use a slow cooker, it will take you much longer, about an hour and a half to soften the beans.
