Two cups of rice is the figure, and it is worth explaining where it comes from because the original recipe never gave one. What the recipe does state is the liquid: four cups of water or broth plus 240 ml of tomato sauce, for six servings. Colombian rice is cooked at roughly two parts liquid to one part rice, which puts it at two cups. Judge the pot by the grain rather than by the clock, and if it is still firm when the liquid has gone, add a splash of hot broth and give it five more covered minutes. Cook the chorizo first and leave the fat in the pot. Two minutes over medium-high heat renders enough of it to colour the oil orange, and that fat is what carries the paprika and garlic in the sausage into every grain of rice. Pouring it off is throwing away the flavour of the dish. The peas go in for two minutes at the end because they are already cooked. If yours are raw, the recipe's own note says to put them in with the rice instead.
