Colombian Cholado (Shaved Ice with Fruit)

A cholado is a tall glass of shaved ice layered with chopped fruit, fruit syrup and condensed milk, finished with a wafer. It comes from Jamundí and Cali, in the Valle del Cauca, and it is street food: assembled to order and eaten straight away, before the ice melts. Makes four.

Ingredients

  • 15 medium strawberries, chopped small
  • 1 teaspoon white sugar for macerating the strawberries
  • 2 bananas, chopped small
  • 1 mango, chopped small
  • 2 kiwis, chopped small
  • Ice cubes, about 2 cups per glass crushed or shaved; a snow cone machine is ideal
  • Raspado syrup, any flavour cherry, passion fruit or blackberry; bottled snow cone syrup works
  • Condensed milk for lining the glass and finishing on top
  • 4 wafer cookies to decorate
  • 4 pieces mango to decorate
  • 4 pieces apple to decorate

If you want to make the syrup at home

  • 2 cups blackberry pulp
  • ½ cup water
  • ¾ cup sugar

Instructions

  • Put the chopped strawberries in a small bowl with the sugar. Stir and leave them to macerate while you cut the rest of the fruit: they release juice and sweeten as they sit.
  • Crush or shave the ice in a food processor or blender. You want a fluffy snow rather than chunks.
  • Line the inside of each glass with condensed milk, letting it run down the sides.
  • Fill each glass about three quarters full with the ice.
  • Pour the syrups over the ice.
  • Top with a quarter of each fruit per glass.
  • Cover the fruit with more condensed milk.
  • Decorate with the mango and apple pieces, the wafer cookies, a straw and a spoon. Serve immediately: the ice starts melting straight away.

For the syrup

  • For the syrup, if making it: combine the water, fruit pulp and sugar in a small saucepan and bring to a boil over medium-high heat.
  • Keep cooking until the sugar has dissolved and the mixture has thickened into a syrup. Let it cool in the refrigerator before using.
