Ingredients

  • 240 g of cassava starch about 2 cups
  • 2 tablespoons of pre-cooked corn flour for arepas or wheat flour.
  • 1 teaspoon of baking powder
  • 2 tablespoons of sugar
  • 1 teaspoon of salt
  • 50 g of grated feta cheese about ½ cup
  • 200 g of grated fresh cheese about 2 cups
  • 3 tablespoons of softened butter
  • 1 large egg
  • Milk as needed

Instructions

  • Preheat the oven to 425ºF (220ºC).
  • Thoroughly mix cassava starch, corn flour, baking powder, sugar, and salt. If you have a food processor, you can use it.
  • Now, add the fresh cheese, feta cheese, butter, and egg; blend them well with the dry ingredient mixture. Gradually add milk until you achieve a soft dough.
  • Shape medium-sized balls (about the size of a golf ball) and place them on a cookie sheet lined with parchment paper or greased with butter. You can also roll the balls to create a small strip about ½-inch thick and join the ends to form a ring.
  • Bake the pandebonos for about 20-25 minutes or until golden. Serve immediately with a delicious cup of coffee.
