Colombian Salpicón (Fruit in Juice)
Salpicón is the Colombian fruit refreshment: pineapple, mango, strawberry, apple, banana and papaya chopped small and covered with fruit juice, served cold in a tall glass with a spoon. It is not the Mexican or Spanish salpicón, which are savoury meat and seafood salads. Serves six.

- 1 cup pineapple, cut into small pieces
- 1 cup mango, cut into small pieces
- 4 cups fruit juice: watermelon, strawberry, papaya or orange fresh, not from concentrate; watermelon is the most common
- 1 cup strawberries, cut into small pieces
- 1 cup apple, cut into small pieces
- Vanilla ice cream or condensed milk, optional to top each glass
- 1 cup banana, cut into small pieces add last: it softens and clouds the juice fastest
- 1 cup papaya, cut into small pieces
Put the pineapple, mango, strawberries, apple, banana and papaya in a large bowl and pour the juice over the fruit.
Stir very gently, so the softer pieces do not break up.
Serve cold in a tall glass, with a spoon. If you like, top with a scoop of ice cream or a drizzle of condensed milk.
