Kiwi Juice

Kiwi juice made in a blender with two peeled kiwis, water and sugar to taste, in about ten minutes. The one thing that matters is not over-blending: crushed kiwi seeds turn the juice bitter, so stop as soon as it is smooth. Ripe fruit needs almost no sugar. Serves two.

Ingredients

  • 2 kiwis, peeled ripe: they should give slightly when pressed with a thumb
  • 2 cups water about 475 ml; less for a thicker juice
  • Sugar, to taste ripe fruit needs very little

Instructions

  • Peel the kiwis and put them in the blender with the water and sugar to taste.
  • Blend for about 30 seconds, just until smooth. Do not go beyond that: over-blending crushes the seeds and turns the juice bitter.
  • Serve straight away, over ice if you like. If it tastes sharper than you want, pass it through a fine strainer.

Notes

Kiwi seeds are what make the juice bitter, and only once they are crushed, so keep the blending short. Removing the white core before blending helps too, since it is firmer and slightly bitter on its own. If a batch still comes out sharp, a fine strainer takes out the seed fragments in one pass.
