Apple Juice with Lemon

Three apples blended with water and lemon, then strained. Five minutes, no cooking, and the lemon is there to stop it browning as much as for the taste.

Ingredients

  • 3 apples cored; leave the skin on for colour
  • 1 small lemon the juice; it slows the browning
  • Sugar or honey, to taste
  • 3 ice cubes one per glass
  • 3 glasses water

Instructions

  • Wash the apples and cut them into medium pieces. Put them in the blender.
  • Cut the lemon in half and squeeze the juice into the blender.
  • Add the water and the honey or sugar, and blend until everything is combined.
  • Strain the juice to take out the pulp and any bits of skin. Put an ice cube in each glass and serve.

Notes

Apple juice browns fast. The flesh oxidises the moment it is cut, and by the time it has been blended and strained it will already be turning beige, which is normal and not a fault. The lemon juice slows it considerably and is worth adding even if you do not want the flavour. Straining is what separates this from a smoothie: apple pulp is gritty rather than smooth. Leave the skins on for more colour and more flavour, since the sieve takes them out anyway.
