Beet Juice, Blended Raw

Two raw beetroots blended with water and sugar. Three ingredients, five minutes, and it stains everything it touches.

Ingredients

  • 2 medium beets raw, peeled and thinly sliced
  • Sugar, to taste
  • Water as needed

Instructions

  • Peel the beets, taking off the skin and any leaves or stems, and slice them thinly.
  • Put them in the blender with the sugar and a little water.
  • Blend for about a minute, then strain if you want it smooth, and serve.

Notes

Slice the beetroot thinly before it goes in. Raw beetroot is dense and a blender struggles with thick chunks, leaving gritty pieces however long it runs. Straining is optional and depends on your blender: a powerful one gives a juice smooth enough to drink as it is. Beetroot stains hands, boards and cloth, and the colour on your hands takes a day to fade. A squeeze of lime or orange juice cuts the earthiness considerably if the flavour is too much on its own.
