Carrot Juice with Milk and Vanilla

Raw carrot blended with milk, sugar and vanilla, then strained. Made with milk rather than water, which is the Colombian way, and it takes five minutes.

Ingredients

  • 2 medium carrots raw, peeled and chopped small
  • 2 glasses milk about 400 ml; water works but gives a thinner drink
  • Sugar, to taste carrots are already sweet, so taste first
  • ½ teaspoon vanilla extract

Instructions

  • Wash and peel the carrots, then chop them into small pieces so the blender can break them down.
  • Put them in the blender with the sugar, the vanilla extract and the milk.
  • Blend for a few seconds, until everything is combined.
  • Strain the mixture to take out the carrot pulp, and serve.

Notes

In Colombia this is made with milk rather than water, which turns it from a juice into something closer to a milkshake and takes the edge off the raw carrot. Chop the carrot small before it goes in: raw carrot is dense, and a blender left to deal with large chunks gives a gritty result no matter how long it runs. Straining is what separates this from a smoothie, since carrot fibre does not break down smoothly. Taste before adding sugar, because carrots are sweet enough that many people add none.
