A pizza base made from grated cauliflower bound with egg and mozzarella, baked before it is topped. Squeezing the water out is the entire recipe. Serves three.
Everything depends on how dry you get the cauliflower. It is around 92 per cent water, and a base made from cauliflower that has only been drained in a sieve will not hold together: it bakes into a wet, floppy disc that cannot be picked up. Cook it briefly, let it cool enough to handle, then wrap it in a clean tea towel and wring it out hard. You should be surprised by how much comes out. The base is baked on its own before the toppings go on, which is the other structural decision: topping raw cauliflower dough gives you a soggy middle every time.
