Shrimp boiled briefly, then dressed with red onion, tomato, cilantro, tomato sauce and the juice of lime and orange, and left twenty minutes for the flavours to come together. Four servings.
Watch the shape of the shrimp rather than the clock. A shrimp that has just cooked curls into a loose C and turns opaque; one that has gone too far curls tight into an O and turns rubbery. The times in the first step are a good guide and the shape is the confirmation. Cool them the moment they come out of the water, under cold running water or in iced water. Shrimp carry a lot of heat and go on cooking in their own warmth for several minutes after draining, which is where most overcooked ceviche comes from. This is the Colombian style rather than the Peruvian one. The shrimp are cooked rather than cured raw in acid, and a cup of tomato sauce goes in with the citrus, which gives the pink, slightly sweet dressing you see on the coast. Twenty minutes is the minimum and an hour in the fridge is better. It is eaten cold, with saltine crackers or patacones.
