Skirt steak marinated in soy sauce, vinegar, lemon, mustard and garlic for half an hour, then grilled four or five minutes a side. Forty-five minutes in all, and the marinade does the work.
Churrasco is the cut, not the dish. In Colombia it means skirt steak: a long, flat, coarse-grained piece from the belly with a great deal of flavour and a tendency to go tough if it is overcooked. That grain is why the marinade matters and why the slicing does too. Half a cup of soy sauce is doing the salting, which is why the salt only appears at the end. Do not add more before it goes in the pan. Thirty minutes is the minimum and a couple of hours is better; the acid from the vinegar and lemon works on the surface and the soy carries the flavour in. Four or five minutes a side over medium-high heat gives a steak still pink in the middle, which is what this cut wants. Cooked through, skirt steak turns chewy. Let it rest a few minutes and slice it against the grain, at an angle: with the grain it is stringy no matter how well it was cooked.
