Coca-Cola Rice (Colombian Sweet Rice)
Coca-Cola rice replaces half the cooking water with regular cola: the sugar caramelises lightly as the liquid cooks off, colouring the grains and adding a spiced sweetness. With raisins and a fried onion base, it is a festive rice rather than an everyday side. Thirty minutes, serves six.

- 2 cups white rice
- 1 ½ cups Coca-Cola regular, not diet: the sugar is what caramelises
- 1 ½ cups water
- 1 onion, finely chopped used in step 2; it was missing from the original list
- ¼ teaspoon salt
- 1 tablespoon bouillon about one cube, crumbled
- ¼ teaspoon sugar
- 2 tablespoon oil
- ½ cup raisins, optional
In a large pot, heat the oil over medium-high heat.
When it is hot, add the rice and the chopped onion and fry for a few minutes, until the rice turns translucent at the edges and the onion softens.
Add the water, the Coca-Cola, the sugar, the salt, the raisins and the bouillon. Stir well and let it cook over high heat.
When the liquid has cooked off the surface, cover the pot and lower the heat, then leave it for 15 to 20 minutes. Do not lift the lid during this time: the rice is cooking in trapped steam, and opening it leaves the top layer hard.
Turn off the heat, uncover and fluff with a fork. Serve straight away.
