Ingredients

  • 3 ripe avocados.
  • Juice of one lemon.
  • 1 finely chopped egg onion.
  • 2 tablespoons of cilantro.
  • 3 warm eggs.
  • Salt and pepper to taste.
  • Mayonnaise to taste.
  • Chili or spicy optional.

Instructions

  • Cut the avocados in half, remove the seed and the peel.
  • Once done with all the avocados, place them in a bowl and mash them until a puree is formed. You can do this with a fork or a manual mixer.
  • Cook the eggs for 10 minutes, remove them from the heat, let them rest, peel and dice them, and add to the avocado puree.
  • Add the lemon juice, the finely chopped onion, the finely chopped cilantro, the mayonnaise, the salt and the pepper, and stir.
  • If you wish, add spicy to taste and stir again.
