Mango Juice (Jugo de Mango)

Four mangos blended with two cups of water and sugar to taste. Thirty seconds in the blender, two glasses, and how much water goes in decides whether it is a juice or a smoothie.

  • 4 medium-sized mangos peeled and cut
  • 2 cups water less for a thicker juice
  • Sugar to taste

Instructions

  • Put the mango, the water and sugar to taste in the blender and blend for about 30 seconds.
  • Serve, with ice cubes if you want it colder.

Notes

Four mangos to two cups of water is the ratio, and it is the only decision in this recipe. Less water gives something thick enough to eat with a spoon; more gives a thinner juice that goes further. Colombian juices are usually made this way rather than squeezed, so the pulp stays in and the drink has body. Ripe mango matters more than anything else here. There is no cooking and nothing to hide behind: a mango that is still firm gives a juice that tastes green and needs a lot of sugar to be drinkable. The skin should give under a thumb and the fruit should smell of mango at the stem. Thirty seconds in the blender is enough. Longer whips air into it and the juice turns pale and foamy.
