Papas Guisadas (Colombian Stewed Potatoes)

Papas guisadas are whole potatoes boiled in their skins and then folded into hogao, the Colombian sofrito of tomato, scallion and garlic cooked down in oil. Seven ingredients, thirty minutes, no meat. It is a side dish, served alongside rice and whatever else is on the table. Serves two.

Ingredients

  • 4 medium potatoes, whole and unpeeled waxy potatoes hold their shape best
  • 3 tomatoes, finely chopped
  • 3 sprigs of scallion, or 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 pinch ground pepper, optional
  • 3 teaspoons oil
  • Salt, to taste

Instructions

  • Wash the potatoes thoroughly. Boiling them with the skin on keeps them from waterlogging, but you can peel them if you prefer.
  • In a pot, cover the whole potatoes with water and cook over medium heat for about 20 minutes, until a knife goes in with no resistance.
  • Drain and set aside.
  • Now make the hogao, which is the Colombian sofrito this dish is built on. In a pan over medium heat, add the oil, the tomatoes, the scallion, the garlic, the pepper if using, and salt to taste.
  • Sauté for about 7 minutes, stirring, until the onion turns translucent and the tomato has broken down into a thick, jammy sauce.
  • Add the potatoes to the pan and turn them gently through the hogao so they are coated all over.
  • Alternatively, serve the potatoes plain and spoon the hogao over the top.
