The crisps go on last and the hot dog gets eaten immediately, because they lose their crunch within a couple of minutes against hot sausage and sauce. Salsa rosada is mayonnaise and ketchup mixed roughly two to one, and it is on almost everything in Colombia, from chips to hamburgers. Colombian street versions pile on more than this: pineapple sauce, mustard, quail eggs and cheese sauce all appear, and nobody considers it excessive. The bacon is best fried crisp rather than soft, since it has to hold up against everything on top of it.
