Pomegranate Juice from Fresh Seeds

Two pomegranates blended with water and sugar and strained. The seeds inside the arils are hard, which is the reason for the sieve.

Ingredients

  • 2 pomegranates the arils, seeds and all
  • Sugar, to taste
  • Water as needed
  • Ice cubes

Instructions

  • Cut each pomegranate in half and get the arils out, putting them straight into the blender.
  • Add the sugar and the water and blend for about 30 seconds, no longer.
  • Strain the juice to take out the crushed seeds, then serve over ice.

Notes

Thirty seconds and no more. Each aril has a hard seed inside it, and a long blend grinds those seeds into the juice and turns it bitter and gritty. A short blend bursts the juicy part and leaves the seeds mostly whole for the sieve to catch. The easiest way to get the arils out is to halve the fruit, hold it cut side down over a bowl and hit the skin with a wooden spoon: they fall out in seconds. Pomegranate juice stains permanently, which is worth knowing before you do this in a white shirt.
