Coca-Cola Rice FAQ
Three things. Its sugar caramelises lightly as the liquid cooks off, which is where the colour comes from. The caramel and spice notes of the soda flavour the grains. And the acidity keeps the rice from going gluey. It replaces half the cooking water, not all of it.
Not really. What comes through is a caramel sweetness and a faint spiced note, not a soda flavour. If you did not know, you would guess there was sugar and something warm in it. It is sweet enough that it belongs alongside savoury dishes rather than as a plain side.
It will not work the same way. The sugar is what caramelises and gives the colour and body, and sweeteners do not caramelise. You would get the colour of the soda without any of the effect. Use the regular version.
Any regular cola works: the caramel base is what matters. Other dark sodas behave differently, since the spice profiles vary. Clear sodas add sweetness without the colour, which changes the point of the dish.
The last fifteen to twenty minutes cook the rice in trapped steam rather than in liquid. Every time you lift the lid you release it, and the grains on top stay hard while the bottom overcooks. That is why the recipe says not to uncover.
It is a festive rice rather than an everyday one: Christmas tables and celebrations, alongside roast pork or chicken. The sweetness and the raisins put it in the same category as other holiday rices across Latin America.
📖 Recipe

Ingredients
- 2 cups white rice
- 1 ½ cups Coca-Cola (regular, not diet: the sugar is what caramelises)
- 1 ½ cups water
- 1 onion, finely chopped (used in step 2; it was missing from the original list)
- ¼ teaspoon salt
- 1 tablespoon bouillon (about one cube, crumbled)
- ¼ teaspoon sugar
- 2 tablespoon oil
- ½ cup raisins, optional
Instructions
- In a large pot, heat the oil over medium-high heat.
- When it is hot, add the rice and the chopped onion and fry for a few minutes, until the rice turns translucent at the edges and the onion softens.
- Add the water, the Coca-Cola, the sugar, the salt, the raisins and the bouillon. Stir well and let it cook over high heat.
- When the liquid has cooked off the surface, cover the pot and lower the heat, then leave it for 15 to 20 minutes. Do not lift the lid during this time: the rice is cooking in trapped steam, and opening it leaves the top layer hard.
- Turn off the heat, uncover and fluff with a fork. Serve straight away.
