A quesadilla is a tortilla made from corn or wheat flour, typically folded in half and filled with various ingredients, such as mushrooms, vegetables, cheese, potatoes, or, in our case, chicken. It's typically grilled on a griddle. While the tortilla is often served folded, it can also be prepared with two whole tortillas, a technique known as a "synchronized tortilla."
After tacos, chicken quesadillas are one of the simplest dishes brought to us by Mexican cuisine, contributing to global gastronomy and influencing modern culinary concepts. They're widely loved for their versatility, practicality, affordability, incredible taste, and ease of preparation.
The most basic ingredients for a chicken quesadilla are corn tortillas, chicken, and cheese. You can add sweet corn kernels, bell peppers, mushrooms, among other ingredients, and pair them with homemade sauces, guacamole, and enjoy them at any time, be it breakfast, lunch, or dinner.

A Special Touch: How can I personalize my chicken quesadillas?
Chicken quesadillas are fabulously versatile. While the basic recipe calls for chicken breast, onions, and red bell peppers, you can add ingredients based on your preferences. Popular options include cilantro, corn, black beans, jalapeños, or mushrooms. To give it a Colombian touch, consider adding "hogao," a typical Colombian sauce made with tomatoes, onions, garlic, and cilantro.
Improving the Texture: How can I avoid them being too oily?
Once you've cooked your fillings, allow them to cool before adding to your tortillas. This reduces the amount of oil released during cooking and ensures crispy tortillas.
A Healthier Version: How can I make healthier quesadillas?
To make your quesadillas healthier, use whole wheat tortillas instead of corn tortillas. Also, increase the vegetable content and moderate the cheese amount.
Technical Aspects: How to fold them correctly?
After adding your fillings and cheese to the tortilla, fold it in half to form a half-moon. Use a spatula, ensuring the filling stays inside. Cook each side until the tortilla is golden and crispy, and the cheese has melted.
Perfect Pairings: What can I serve with them?
Chicken quesadillas can be paired with a variety of dishes and sauces. Good choices include guacamole, sour cream, tomato sauce, pico de gallo, refried beans, or a fresh salad.
Tips and Warnings
Common mistakes when making quesadillas include overloading with too many fillings, causing them to fall apart during cooking. Remember, less is more. Another error is not pre-heating the pan enough before adding the tortilla, resulting in insufficient browning and melting of the cheese.
If you enjoyed this recipe, I recommend trying other quesadilla recipes like shrimp quesadillas or beef quesadillas. They share many similar ingredients and are equally delicious. You might also want to try stuffed arepas, a traditional Colombian dish that also includes cheese and can be filled with chicken.
I hope these tips and answers help you make the perfect chicken quesadilla.
We recommend serving with: french fries or fried yucca.
📖 Recipe
Ingredients
- 8 corn or wheat tortillas. If you wish to fold the tortilla into a half-moon (use only 4 tortillas.)
- 1 chicken breast.
- ½ red bell pepper.
- ½ onion.
- 1 bag of shredded mozzarella cheese.
- 4 slices of cheddar cheese (add cheeses according to your preference.)
- 1 teaspoon of salt.
- 1 tablespoon of olive oil.
Instructions
- Start by cutting the red bell pepper and onion into cubes or strips, then sauté in a pan with a dash of oil and a pinch of salt over medium heat.
- Once they are well sautéed, add the diced chicken breast seasoned with salt (If you wish to marinate the chicken with cumin, thyme, etc., you can do so).
- Sauté the chicken well, and once done, set it aside on a plate to cool slightly.
- Meanwhile, on a clean skillet, place the corn or wheat tortilla and spread the chicken, onion, and pepper mixture on top.
- Evenly cover with cheese, place another tortilla on top (Remember, if you prefer, skip the second tortilla and simply fold the first one in half) and let the bottom tortilla brown for about 1 minute. Covering the skillet with a lid can help the cheese melt more efficiently.
- After a minute, flip the tortilla using tongs to brown the other side.
- Once both tortillas are golden, transfer to a plate.
