I want to share a delicious recipe for rice with chicken, which is one of my favorite Colombian recipes. It reminds me of the great moments of my childhood. At home, they used to prepare it very often, especially on particular dates or family celebrations. A great memory is when my mother made the chicken, cutting it into small pieces, marinating it, letting it cook, and then inviting her children to help her get rid of it.

- For the chicken
- 1 chicken breast without skin 2 pounds
- 1 onion
- 5 cups of water
- ½ tablespoon ground cumin
- Salt and pepper
- For the rice
- 2 cups of rice
- 4 cups of water
- 2 tablespoons of vegetable or olive oil
- 1 onion cut into small cubes
- 2 cloves of garlic crushed
- ½ red paprika chopped in julienne
- ½ cup diced carrot diced and pre-cooked
- ½ cup chopped and pre-cooked beans
- ½ cup pre-cooked pea
- 1 tablespoon tomato sauce or pasta
- 1 celery stalk without vein and diced
- Salt pepper and spices to taste
- A pinch of color or saffron.
- In a pot, add the breast, long onion, cumin, water, salt, and pepper.
- Let it boil over medium heat for about 30 minutes.
- When the breast cooked, please remove it from the pot and reserve it on a plate. When it is cold, crumble it with your hand or with the help of a fork.
- Use the chicken broth for the preparation of rice, adding 4 cups of this, one tablespoon of oil, a pinch of color, and the species you want to highlight the flavor.
- Add the 2 cups of rice and stir. Leave on medium heat until it dries, about 10 minutes, lower the temperature and cover the pot (when dry, it recommended to stir the rice to separate the grains).
- In a pot, heat a tablespoon of oil, onion, paprika, garlic, celery, and cook for about 4 to 5 minutes.
- Add the pre-cooked vegetables, the pinch of saffron, the shredded chicken, the tomato sauce to the previous cooking, and stir so that all the ingredients are well mixed. Then add the rice and stir well with the previous mixture.
- Serve hot and accompany banana chips, bread, or a creamy salad.
