Ingredients

  • ½ pound of rice.
  • 2 cups of chicken or vegetable broth.
  • ½ cup of spinach.
  • ½ cup of parsley or cilantro.
  • Salt and pepper to taste.
  • 1 garlic.
  • 1 egg onion.
  • Oil.

Instructions

  • In the blender, add the chicken or vegetable broth (in case you don't have, use water) along with the spinach leaves, parsley or cilantro, salt, and pepper, and blend until everything is homogeneous. Reserve.
  • In a pot, add the oil, along with the finely chopped onion and garlic, sauté a little and add the rice. Stir frequently to prevent burning.
  • After a few minutes, add the blender mixture (you can add it as is or strain it).
  • Let it boil, and when the water has dried, cover the pot and lower the heat.
  • Let the rice cook for another 15 to 20 minutes.
  • After this time, turn off the heat and let it rest for a few minutes.
